Fallow Deer hunting in Australia
Dama dama
The classic Australian rut hunt, croaking bucks every April
Fallow deer are the most widespread deer in Australia, with strong populations across the Tasmanian Midlands, the New England and Central Tablelands of NSW, western Victoria, south east South Australia and parts of Queensland. They offer superb venison and one of the great spectacles in Australian hunting: the April rut, when bucks croak on traditional stands and can be called and stalked in daylight.
A mature fallow buck is a genuinely handsome trophy. Bucks carry broad palmated antlers, and coat colours range from white through menil and common to almost black, sometimes within the same mob. Tasmania's Midlands herd is widely regarded as the best quality fallow population in the southern hemisphere thanks to nearly two centuries of careful management by the same grazing families.
Because fallow favour open grazing country broken by timber, private farmland is their prime habitat. Much of the best fallow hunting in the country happens on exactly the kind of sheep and cattle properties listed on this site, where landholders want deer numbers managed and welcome ethical hunters.
Where to hunt fallow
The Tasmanian Midlands and Central Highlands, the New England and Central Tablelands of NSW, western Victoria, the Limestone Coast region of South Australia and the Granite Belt of southern Queensland.
When to go
The rut peaks in April in every state, when bucks croak on traditional stands. Tasmania runs a regulated season: the antlered buck season opens in late February and runs into early April, covering the start of the rut, while the antlerless season now runs from February to October. On mainland private land, fallow can generally be hunted year round subject to state rules.
Methods & gear
Stalking timbered edges at dawn, sitting croaking stands during the rut, and glassing open pasture through the day. Fallow are alert, herd-oriented deer, so wind discipline and slow movement matter. Any accurate centrefire from .243 up is adequate.

Fallow Deer hunting: common questions
When is the fallow deer rut in Australia?
The croak, as the fallow rut is known, peaks in April right across Australia. Bucks hold traditional rutting stands and call from before dawn until mid morning, which makes April the most exciting month to book a fallow property. Book early, because rut weeks sell out months ahead.
How does Tasmania's fallow deer season work?
Tasmania manages fallow deer under an annual licensing system through NRE Tasmania. The antlered buck season opens in late February and runs into early April, and each licensed hunter may take one male deer per year under a tag. The antlerless season is much longer, running from February to October, with no government quota on most private properties. You will need the appropriate Tasmanian licence in addition to your booking.
Where is the best fallow deer hunting in Australia?
The Tasmanian Midlands is the benchmark for trophy quality, with heavy palmated bucks produced by nearly two centuries of management. The New England Tablelands of NSW offers the most accessible high-density fallow hunting on the mainland, and western Victoria and the SA Limestone Coast both hold strong herds on farm country.
What licence do I need to hunt fallow deer on private land?
It depends on the state. NSW, Queensland and South Australia treat deer as feral or pest animals on private land, so you need only landholder permission and your firearms licence. Victoria requires a Game Licence endorsed for deer, and Tasmania requires its annual hunting licence and tags.
